Andrew Carmines operates Hilton Head’s oldest restaurant that began as his family's oyster business. A longtime champion of sustainable seafood, he has been involved in various environmental initiatives including Hilton Head Island Sea Turtle Project, Southern Shrimpers Alliance and the East Coast Shellfish Growers Association.

Growing up exploring the May River, Amber Kuehn developed her aquatic interests by studying Marine Biology, earning a Master Captain's License, and providing scuba instruction to Atlantic and Pacific Ocean divers. After returning to the Lowcountry, she began managing Sea Turtle Patrol Hilton Head and founded Spartina Marine Education Charters, offering field biology exploration.
